While there are a variety of options available, our Chef’s personal favourite meal is starting with Boyne Valley Olive fed Pork Belly with Confit Beetroot, Red Berry Jus. Next, he savours Carlingford Bay Halibut, Fresh Pesto Crust, Saffron Risotto, Roast Tomato and Veal Jus. Finally, he enjoys the Passion Fruit Mousse, Orange Victoria Sponge Cake, Passion Fruit Sauce, Champagne Sorbet, Fresh Mint and Exotic Coulis.  And of course, a glass of Sauvignon Blanc is a must to accompany the meal.
